Quick Turkey and Spinach Tetrazzini

  • 1/4 lb spaghetti
  • 2 cups cooked turkey breast, chopped
  • 110z frozen creamed spinach, thawed
  • 1 cup cottage cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp grated parmesan cheese, divided

Preheat oven to 500 degrees. Break spaghetti into thirds and place in a large pot of boiling water 10 minutes or until al dente. Drain, reserve 1/4 cup liquid. Mix spaghetti and reserved liquid with remaining ingredients, using one half of the parmesan cheese. Spread mixture in a shallow dish. Sprinkle with remaining parmesan cheese. Bake 10 minutes or until heated through and top is golden.
