Hester's Chicken Casserole

Cook whole chicken and debone, or cook chicken breast until tender. Save broth. Cut chicken into bite size pieces.

Mix 1 small container sour cream, 1 can cream of mushroom soup and 1/4 to 1/2 cup chicken broth.

Crumble enough saltine crackers (about 1 pk) into about a tablespoon melted margarine, making a fine mixture. Put 1/2 of cracker mixture in bottom of a casserole dish - save remainder for topping.

Place chicken on top of cracker mixture. Pour soup mixture over top of chicken. Sprinkle on remaining cracker mixture. Bake in a 350 degree oven until hot through.

* I like to cook rice with this but my hubby loves it just by itself.
